Watermelon & Mango Cooler
2 cups roughly chopped watermelon
2 x 250ml coconut and mango water
dash of lemonade/sparkling wine
Melon & Lime Spritz
1/2 cup melon liqueur
1L pineapple fruit drink
Lemon and lime sparkling mineral water
Pink Lemonade & Raspberry Vodka
1/2 cup raspberries
2 tablespoons caster sugar
1/2 cup vodka
1.25L traditional pink lemonade

TO PREPARE THE WATERMELON & MANGO COOLER
Place the roughly chopped watermelon into a food processor with the coconut and mango water and process until smooth. Strain into a jug.Half fill cocktail glasses with crushed ice, pour over the watermelon mix and add a dash of lemonade/sparkling wine. Top with a little chopped mango. Serve with short sipping straws. -
TO PREPARE THE MELON & LIME SPRITZ
Divide 2 cups crushed ice and the melon liqueur between 6 hi-ball glasses. Pour the pineapple fruit drink between the glasses and top each with lemon and lime sparkling mineral water. Serve with a straw, garnish with mint leaves or a lime slice. -
TO PREPARE THE PINK LEMONADE & RASPBERRY VODKA
Place raspberries in a large jug with the caster sugar and mix until combined. Pour over the vodka. Chill until serving time. Add a handful of ice cubes and fill the jug with the bottle of chilled traditional pink lemonade.
