Using a knife remove the top and inner hull of each strawberry to hollow out. Remove the inner of the strawberries and save the outer and the tops.
In a small bowl mix the cheese, sugar, vanilla and chocolate.
With a teaspoon or piping bag, stuff the mixture into each strawberry. Then place the tops back on the strawberries.
Serve chilled.
