- Preheat oven to 180C (160C fan forced). Spray a 12-cup capacity shallow ovenproof dish with cooking spray. Melt 30g butter in a frying pan over a medium heat. Add leeks and thyme. Cook for 10 min, stirring often.
- Layer potatoes, cooked leeks, artichokes and most of the cheese into the dish. Pour over cream. Sprinkle with remaining cheese. Season well with black pepper.
- Cover tightly with lightly oiled foil and bake for 1 hr. Remove foil and bake for a further 20 min or until golden brown. Garnish with chives if desired.
