This traditional dish is both warming and filling, a great accompaniment to any meal!


Prep 20 min | Cook 1 hr 20 min




  • 2 leeks, halved and sliced
  • 2 teaspoons chopped fresh thyme
  • 2kg desiree potatoes, peeled and thinly sliced
  • 400g can artichoke hearts, drained and sliced
  • 1 cup grated or shredded parmesan
  • 600ml light cooking cream


  1. Preheat oven to 180C (160C fan forced). Spray a 12-cup capacity shallow ovenproof dish with cooking spray. Melt 30g butter in a frying pan over a medium heat. Add leeks and thyme. Cook for 10 min, stirring often.
  2. Layer potatoes, cooked leeks, artichokes and most of the cheese into the dish. Pour over cream. Sprinkle with remaining cheese. Season well with black pepper.
  3. Cover tightly with lightly oiled foil and bake for 1 hr. Remove foil and bake for a further 20 min or until golden brown. Garnish with chives if desired.
