- Remove and discard as much skin as possible from the chicken. Combine seasoning mix, black pepper, lime juice and rind. Brush over the chicken and marinate for 10 min, longer if time permits.
- Preheat barbecue to medium (180C) and cook chicken, covered with a hood, over indirect heat for 30 min. Transfer to the chargrill and increase heat, cook for 5-8 min, turning often until golden. Serve with Seasoned Wedges, corn and pieces of lime.
- Cut 2-3 medium potatoes into wedges. Place on a baking tray, spray with oil, sprinkle with sea salt and pepper. Bake at 200C (180C fan forced) for 50 min or until golden, turning often. Wedges can also be cooked on the barbecue - just place the tray over the grill and turn often.
