Try adding a poached egg to this dish for an extra creamy taste

  • 1 onion, finely sliced
  • 2 teaspoons bottled crushed garlic
  • 6 prosciutto pieces, chopped
  • 2 cups sliced mushrooms
  • 1/2 cup white wine
  • 300ml tub light cooking cream
  • 625g packet fresh egg fettuccine, cooked and drained
  • 1/3 cup chopped chives


  1. Melt 20g polyunsaturated margarine in a frying pan over medium-high heat. Add onion, garlic, prosciutto and mushrooms and cook, stirring often for 5 min.
  2. Add wine, simmer for 1 min. Stir in cooking cream and simmer for 2 min or until slightly thickened.
  3. Stir through pasta and chives, toss to combine. Top each serving with a soft poached egg if desired. Season with black pepper and garnish with shaved parmesan cheese and extra chopped chives if desired.
