- Melt 20g polyunsaturated margarine in a frying pan over medium-high heat. Add onion, garlic, prosciutto and mushrooms and cook, stirring often for 5 min.
- Add wine, simmer for 1 min. Stir in cooking cream and simmer for 2 min or until slightly thickened.
- Stir through pasta and chives, toss to combine. Top each serving with a soft poached egg if desired. Season with black pepper and garnish with shaved parmesan cheese and extra chopped chives if desired.
