Made with tasty Cajun Wedges, this Baked Fish Fillet recipe is a real crowd pleaser. Use a little chopped parsley to the crumb mixture to jazz it up.

  • 20g butter, melted
  • zest and juice of 1 lemon
  • 4 frozen fish fillets, thawed and patted dry
  • 1 cup fresh breadcrumbs
  • 2 tablespoons shredded parmesan
  • 1/2 teaspoon each smoked paprika and garlic powder
  • Cajun Wedges, to serve (see below)


  1. Preheat oven to 200ºC (180ºC fan forced) and line a baking tray with baking paper. In a small bowl, combine melted butter, lemon zest and juice. Season to taste with salt and ground white pepper.
  2. Brush fish fillets all over with butter mixture, place onto tray. In a separate bowl, combine breadcrumbs, parmesan, paprika and garlic powder. Pour any remaining butter mixture through the breadcrumbs, stir to combine.
  3. Press breadcrumb mixture evenly over fish fillets and bake for 10-12 min or until fish flakes easily with a fork. Serve with a rocket and red onion salad and Cajun Wedges.

CAJUN WEDGES Cut 4 desiree potatoes into wedges and place into a bowl with 2 teaspoons oil and 1 tablespoon Cajun seasoning mix. Transfer to a lined baking tray and bake for 40 min at 200ºC (180ºC fan forced), turning once halfway through.
