- Preheat oven to 200ºC (180ºC fan forced) and line a baking tray with baking paper. In a small bowl, combine melted butter, lemon zest and juice. Season to taste with salt and ground white pepper.
- Brush fish fillets all over with butter mixture, place onto tray. In a separate bowl, combine breadcrumbs, parmesan, paprika and garlic powder. Pour any remaining butter mixture through the breadcrumbs, stir to combine.
- Press breadcrumb mixture evenly over fish fillets and bake for 10-12 min or until fish flakes easily with a fork. Serve with a rocket and red onion salad and Cajun Wedges.

CAJUN WEDGES Cut 4 desiree potatoes into wedges and place into a bowl with 2 teaspoons oil and 1 tablespoon Cajun seasoning mix. Transfer to a lined baking tray and bake for 40 min at 200ºC (180ºC fan forced), turning once halfway through.
