- Preheat oven to 180C (160C fan forced). Spray an 8-cup capacity shallow ovenproof baking dish with cooking spray.
- Spray a non-stick frying pan with oil and place over a medium-high heat. Cook sausages for 5-6 min, turning often or until browned all over. Transfer to baking dish.
- Add onion and capsicum to frying pan and cook for 3 min. Add tomatoes and beans, cook for 2 min. Spoon mixture over sausages and bake in the oven for 20-25 min or until sausages are cooked through. Serve with Rocket, Orange and Feta salad. Garnish with chopped avocado and coriander leaves.
ROCKET, ORANGE and FETA SALAD
- Place 6 cups baby rocket, 2 segmented oranges and 1 thinly sliced red onion into a bowl. In a small bowl, whisk 2 teaspoons Dijon mustard, 2 tablespoons orange juice and 1 tablespoon olive oil together. Season to taste and pour over salad. Toss gently. Sprinkle with 1/2 cup crumbled feta cheese.
