Description

This easy slice is perfect for an afternoon tea treat!

Time 30 min | Chill 45 min

Ingredients

  • 125g butter
  • 1 tablespoon maple syrup or honey
  • 1/2 cup sweetened condensed milk
  • 1/2 cup coconut
  • 250g biscuits crushed
  • 375g licorice allsorts, cut into small pieces
  • 125g white, milk or dark chocolate buttons
  • 15g vegetable shortening (copha)

Method


  1. Grease and line an 18 x 28cm lamington pan. Put the butter, maple syrup or honey and condensed milk in a microwave bowl and cook on medium high (70% power) for 1 min. Stir and heat again in 30 sec bursts until dissolved.
  2. Stir in coconut and biscuits. Add the licorice and stir until combined. Press firmly into pan. Chill while you prepare topping.
  3. Place chocolate and vegetable shortening in a microwave-safe bowl. Microwave on medium high (70% power) using 20 sec bursts, until melted, about 1 min.
  4. Cool for 10 min then spread over the slice. Chill for 45 min or until set. Cut into squares to serve.
