- Spray a deep frying pan with oil and cook sausages for 8 min, turning often until nearly cooked through. Remove and slice into pieces.
- Add curry paste to pan and fry for 1 min. Stir in all vegies and coconut milk, cook for 2 min. Return sausages, bring to the boil. Reduce heat to low and simmer for 5 min or until vegetables are tender and sausages are cooked through.
- Remove from heat and stir through coriander and basil leaves. Serve with cooked rice. Garnish with fresh basil leaves and coriander sprigs.
