Description

This economical curry is absolutely delicious and quick to prepare.

Serves

4

Ingredients

  • 8 thin chicken sausages
  • 1/3 cup Thai green curry paste
  • 1 carrot, peeled and sliced
  • 100g snow peas, trimmed
  • 1 red capsicum, sliced
  • 400g can baby corn, drained
  • 400ml can coconut milk
  • 1/2 cup each coriander and basil leaves

Method


  1. Spray a deep frying pan with oil and cook sausages for 8 min, turning often until nearly cooked through. Remove and slice into pieces.
  2. Add curry paste to pan and fry for 1 min. Stir in all vegies and coconut milk, cook for 2 min. Return sausages, bring to the boil. Reduce heat to low and simmer for 5 min or until vegetables are tender and sausages are cooked through.
  3. Remove from heat and stir through coriander and basil leaves. Serve with cooked rice. Garnish with fresh basil leaves and coriander sprigs.
