- Melt chocolate and oil in a glass bowl over a pan of simmering water. Half dip the almond bread pieces into the chocolate and place onto baking paper to set.
- Combine mascarpone, caster sugar and vanilla, fold in the whipped cream. Cover and chill.
- To serve, sandwich biscotti together with mascarpone and berries. Accompany with extra biscotti cream if you like.
