- Slice the Swiss roll into 16 even slices. Spread 8 of the slices with raspberry jam and sandwich together with remaining 8 slices. Arrange over the base and sides of a 12-cup capacity serving bowl.
- Sprinkle in the strawberries and drizzle cake and fruit with sherry. Spoon in custard and smooth evenly to cover, top with whipped cream. Cover, chill until required. Garnish with toasted almond flakes and grated chocolate to serve.
