This slice is a great healthy option for afternoon tea.


Time 15 min | Chill 4 hr




  • 1 cup desiccated coconut
  • 250g Nuttelex Original spread
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla essence
  • 500g dates, chopped
  • 18 digestive biscuits, broken into pieces


  1. Line the base and 2 long sides of a 16 x 26cm lamington pan. Sprinkle with coconut, spreading evenly.
  2. In a medium saucepan, melt Nuttelex and sugar. Add vanilla and dates and cook until soft, about 5 min. Remove from the heat and let cool for a few min. Add biscuits and mix well.
  3. Pour the mix into the prepared tray. Flatten with a wet spatula. Chill until set. Turn onto a wooden board, cut into small squares to serve. Sprinkle with extra coconut if desired.
