- Line the base and 2 long sides of a 16 x 26cm lamington pan. Sprinkle with coconut, spreading evenly.
- In a medium saucepan, melt Nuttelex and sugar. Add vanilla and dates and cook until soft, about 5 min. Remove from the heat and let cool for a few min. Add biscuits and mix well.
- Pour the mix into the prepared tray. Flatten with a wet spatula. Chill until set. Turn onto a wooden board, cut into small squares to serve. Sprinkle with extra coconut if desired.
