- Preheat oven to 200ºC (180ºC fan forced) and lightly grease a shallow ovenproof ceramic dish with cooking spray.
- Place fish fillets into the base of the dish in a single layer. Pour wine over fish and top with the tomatoes and fresh basil. Season with sea salt and cracked black pepper.
- Bake for 15-18 min or until fish flakes easily with a fork. Garnish with basil leaves and serve with steamed vegies and potatoes.
Available all year round, flathead fillets are a great option for this recipe. The meat is tender, white and sweet. Use within 2-3 days of purchase. Allow 2 flathead fillets per serve.
