Bring a touch of Mediterranean flavour to the table with this fish dish.
20 min prep time, 30 min cook time
6 cloves garlic, finely chopped
3 sticks celery, finely diced
800g can diced/chopped tomatoes
4-6 thick pieces of boneless white fish
Preheat the oven to 180 C. Lightly spray a 17 x 27cm baking dish with olive oil. Combine the garlic, celery and tomatoes in a small pan and bring to a simmer. Simmer for 5 min. Season to taste.
Spoon most of vegetable sauce into the prepared baking dish. Place the fish pieces in the sauce and then pour over remaining sauce. Cover the dish with foil and bake for 20 min.
Remove the foil and bake the fish for a further 8-10 min, or until it is cooked through. Season to taste with fresh lemon, salt and pepper. Serve with mashed potato and garnish with chopped fresh parsley.
