1kg potatoes peeled and quartered
1 large onion, diced
4 bacon rashers, rind removed and chopped
1 cup chopped green beans, blanched
250g packet of mushrooms, sliced
1/4 cup Dijonnaise mustard
In a large stockpot, boil potatoes in salted water until tender. Drain and return to the pot to keep warm.
Meanwhile, heat a large frying pan over medium heat. Cook onion and bacon for 4-6 min or until onion is soft. Add mushrooms and cook for 2 min until mushrooms are just wilted.
In a large bowl, combine the warm potatoes, green beans and mushroom mixture. Whisk together Dijonnaise and ¼ cup water in a jug, then pour over the potatoes. Toss gently to combine. Garnish with chopped fresh chives and serve with chargrilled chicken and vegetables.
