Raspberry Marshmallow Slice |

Ingredients |
- 250g Scotch finger biscuits
- 150g butter or margarine, melted
- ¾ cup raspberry jam
- 1½ cups sugar
- 5 teaspoons gelatine
- ½ cup milk chocolate buttons, melted

Method
- Preheat oven to 180ºC (160ºC fan forced). Grease and line the base and sides of a 20 x 30cm brownie pan. Place biscuits in a food processor and process until crushed, add butter and process until combined. Press in the pan, bake for 10 min. Drizzle with ½ cup jam while still warm.
- In a saucepan, combine sugar and 1½ cups water, sprinkle gelatine over the surface and stir until dissolved. Bring to the boil, stir until sugar is dissolved. Simmer gently for 2-3mins.
- Allow to cool slightly, then beat until fluffy. Spread over biscuit base and chill until set.
- Using a hot knife, cut the slice into 18 pieces. Melt chocolate and place into a snap-lock bag. Cutting off a corner to create a 4mm hole, drizzle chocolate over marshmallow. Using another bag, drizzle with the remaining raspberry jam. Chill in the fridge until required.
