- Combine all ingredients except the pork ribs in a microwave-proof bowl and heat in microwave for 1 min on high. Stir to combine, and add 1/3 cup water.
- Place ribs in a 39 x 20cm baking dish and pour over half the prepared sauce. Cover with foil and allow to marinate for 10 min.
- Preheat the oven to 200 C (180 C fan forced) and cook the covered ribs for 30 min. Remove the foil and pour over the remaining sauce. Cook ribs, uncovered for a further 30 min or until tender. Cut ribs apart and serve with rice. Garnish with shredded coriander. Serve with soy sauce if desired.
TIP Ribs can be marinated the night before. Chill until ready to cook.
