Description

Not too sweet, these festive rum balls will be perfect to make this Christmas.

Ingredients

  • 500g plain Madeira cake
  • 1/2 cup icing sugar
  • 1 cup desiccated coconut
  • 1/2 cup sifted cocoa powder
  • 1 egg yolk, beaten
  • about 1/2 cup rum or brandy
  • 1/2 cup each chocolate sprinkles and coconut

Method


  1. Crumble cake into a large bowl. Mix in the icing sugar, coconut and sifted cocoa powder. Add the beaten egg yolk and enough rum or brandy to moisten the ingredients.
  2. Using wet hands, roll into small balls and then roll in sprinkles or coconut to coat. Chill until required.
