DescriptionNot too sweet, these festive rum balls will be perfect to make this Christmas. |

Ingredients |
- 500g plain Madeira cake
- 1/2 cup icing sugar
- 1 cup desiccated coconut
- 1/2 cup sifted cocoa powder
- 1 egg yolk, beaten
- about 1/2 cup rum or brandy
- 1/2 cup each chocolate sprinkles and coconut

Method
- Crumble cake into a large bowl. Mix in the icing sugar, coconut and sifted cocoa powder. Add the beaten egg yolk and enough rum or brandy to moisten the ingredients.
- Using wet hands, roll into small balls and then roll in sprinkles or coconut to coat. Chill until required.
