Throw together a simple, low GI dish for the whole family in just 20 minutes.

  • 400g spaghetti or linguine
  • can of drained cherry tomatoes
  • 1/2 cup pesto
  • parmesan cheese shaves and spinach leaves, to serve


  1. Cook 400g spaghetti or linguine in boiling salted water until tender. Drain well.
  2. Reserve a little of the cooking water, place over a low heat and stir in a can of drained cherry tomatoes, 1/2 cup pesto and enough water to help distribute the pesto and make a sauce.
  3. Serve topped with parmesan shaves and spinach leaves if you have some.
