- Bring a large saucepan of water to the boil and cook pasta according to packet directions. Drain and place into a large bowl. Drizzle with a little olive oil and set aside.
- Meanwhile, heat 1/4 cup olive oil in a frying pan over medium-high heat. Cook the garlic and chillies for 1-2 min, stirring constantly. Add the parsley and season well with salt and cracked black pepper. Remove from heat.
- To serve, toss the garlic, mix with the hot pasta and parmesan. Serve topped with rocket, Spanish onion and parmesan salad with some crusty fresh bread.
