Description

Easy recipe, ideal for a quick weeknight dinner. Add red chillies for spice and a zingy result.

Ingredients

  • 400g dried spaghetti
  • 4 large garlic cloves, finely sliced
  • 2 long red chillies, deseeded and finely sliced
  • 1/2 cup finely shredded flat-leaf parsley
  • 1/2 cup shredded or grated parmesan cheese

Method


  1. Bring a large saucepan of water to the boil and cook pasta according to packet directions. Drain and place into a large bowl. Drizzle with a little olive oil and set aside.
  2. Meanwhile, heat 1/4 cup olive oil in a frying pan over medium-high heat. Cook the garlic and chillies for 1-2 min, stirring constantly. Add the parsley and season well with salt and cracked black pepper. Remove from heat.
  3. To serve, toss the garlic, mix with the hot pasta and parmesan. Serve topped with rocket, Spanish onion and parmesan salad with some crusty fresh bread.
