- Toss chicken with chilli spice mix in a bowl to coat evenly. Heat 1 tablespoon rice-bran oil in a large frying pan over medium heat and cook chicken, turning often for 4-5 min or until cooked through.
- Lay toasted bread out on a clean work surface. Spread each with mashed avocado and top with rocket leaves. Arrange chicken over the rocket. Garnish with a dollop of sour cream and a sprig of coriander. Serve immediately.
