- Place spring/green onion, chilli and balsamic into a shallow bowl. Gradually whisk in 1/4 cup olive oil. Season with salt and pepper. Add prawns and toss to coat. Cover and chill for 30 min.
- To serve, arrange 2 lettuce leaves upright into 8 shot glasses and divide prawns between them. Drizzle with dressing and serve.
