Try this easy recipe for cheese and spinach triangles!

Prep 20 min | Cook 30 min

  • 500g packet frozen spinach, thawed
  • 1 1/2 cups crumbled low-fat feta cheese
  • 2 cups fresh low-fat ricotta
  • 6 spring/green onions, thinly sliced
  • 1 egg, lightly beaten
  • 16 sheets filo pastry

  1. Preheat oven to 180C (160C fan forced). Grease 2 baking trays. Squeeze excess water from spinach and put in a bowl. Add feta, ricotta, spring/green onions and egg. Season, add a sprinkle of nutmeg. Mix well.
  2. Place 1 sheet of filo on a flat surface and spray lightly with olive oil, top with a second sheet. Cut into 3 long strips, spoon a heaped tablespoon of spinach mixture on the end of each strip. Fold diagonally, creating a triangle. Continue folding to keep a triangular shape.
  3. Place triangles on a tray and repeat with remaining ingredients. Freeze or chill until required. Spray with olive oil and sprinkle with poppy seeds. Bake for 25-30 min or until golden and crisp. Serve with a mixed salad and minted yoghurt.
