Description

This deliciously simple Zucchini & Feta Slice as a great solution to the weekday dinner dilemma.

Ingredients

  • 2 medium zucchini
  • 5 eggs
  • 3 chopped spring/green onions
  • 1 cup crumbled feta
  • 1/4 cup vegetable oil
  • 1 cup self-raising flour
 

Method


  1. Grate zucchini into a bowl, add eggs, spring/green onions, crumbled feta and vegetable oil. Mix well.
  2. Sift over 1 cup self-raising flour and mix to combine. Transfer to a lined 20 x 30cm shallow baking pan and bake at 180 C (160 C fan forced) for 25-30 min. Serve squares with salad and chutney.
